Add Kafka Headers to the DefaultPublishHandler Interface

We'd like to see the DefaultPublishHandler provided in PJ45923: Guaranteed Delivery Support for JVM Services, to be enhanced to include support for Kafka Headers. Currently the interface only supports the Key and Data related to the Kafka message. We'd like to have the ability to send Kafka headers along with the key and data for the given Kafka message without the need to write our own Kafka publisher.

Given a message or data stream needs to have custom headers that provide additional information about a message when that information is available to our application programs then they can pass that information in the message as UTF-8 ASCII and put this data on this specified input queue that supports this process.

Application programs should have the ability to send many headers.

The header values may contain special characters.
